The ingredients you will need in this Valentine cake recipe are:
2 teaspoon of baking powder
1/2 teaspoon of baking soda
1/2 cup of butter
3 beaten eggs
1-1/4 cup of sugar
3/4 cup of red raspberries
1-1/2 cups of flour
2 teaspoon of vanilla.
6 tablespoon of cocoa
1 cup sour of cream
For the Glaze
2 Tablespoon of butter
2 Tablespoon of light corn syrup
1 cup of chocolate chips
To prepare the Chocolate Raspberry Cake you must begin by pureeing the raspberries. Then mix the cocoa, baking powder, flour, and baking soda in a bowl. In another bowl, mix the butter and sugar together. Add the beaten eggs to this mixture and beat until it is fluffy. After that add the vanilla and sour cream and keep beating. Add all the dry ingredients and mix well until it has blended.
Pour most of the batter into a greased heart shaped pan. Add the pureed raspberries and blend gently with a thin knife. Add the rest of the batter and level off the batter with your thin knife. Bake at 325º for hour. To check if it's done insert a toothpick in the center of the cake, if it comes out clean that means your cake is ready. Now allow the cake to cool in the pan. To make the glaze for the cake:
Put the chocolate chips in a microwavable bowl and Microwave on high for about one minute. You must stop to stir at 15 second intervals, until the chocolate is melted. After that, put the butter and corn syrup in a microwavable cup and heat. Stir it into the melted chocolate mixture until well blended. Let it cool until it has changed texture and has slightly thickened. Pour the glaze smoothly over the top and the sides of the cake. Enjoy!
